Grilled king prawn and vegetable skewers

I hope you are all well! HAPPY EASTER!! Don’t eat all your chocolate in one go! This isn’t really an Easter themed post.. but it is a summery one!

Last weekend, David and I decided to try cooking something new and I wanted to share it with you. It was a lovely, sunny day so we wanted something that wasn’t too filling but still had lots of flavour, so I got googling! I found this amazing recipe and we decided to make king prawn and vegetable skewers.

These were so easy to make and you can chop and change the vegetables around to suit your taste . You could even swap the prawns for chicken if you wanted! We decided to remove the zucchini and replace it with pepper and courgette. We also opted for king prawns (a favourite of both of ours). These were so quick to prepare! You just cut up all the veg so that everything is equal sized and will cook evenly. Next you should marinade it for half an hour, but we got the order mixed up! Ha-ha. We slipped it onto the skewers and brush with a marinade that you make by grinding the herbs, oil and water together. We left them to marinade for half an hour and then cooked them under the grill for about 7 minutes, turning over halfway through. These could also be cooked just as well on a barbeque, which I’m sure we will do later on in the year!
